# 1. Chickpea & Rice Salad

1 cup of cooked boiled rice

1 3/4 cups of water

300g chickpeas rinsed and drained

1/4 cup of dried apricots

2 shallots thinly sliced

2 tbsp of chopped parsley

2 tbsp of roasted walnuts

Dressing - 1 tsp of orange rind

1/3 cup of orange juice

# 3. Salmon Fettuccine Salad

250g Fettuccine pasta cooked al dente

4 cups of water

6 spring onions chopped

1 stick of celery chopped

1 tomato finely chopped

1 cup carrot grated

1 zucchini cut into strips

1 avocado chopped

200g of red salmon drained with skin removed

Dressing: 2 tbsp parsley finely chopped

425g cannelloni beans rinsed and drained

Juice of 1/2 lemon

150ml of vegetable stock

60g button mushrooms finely sliced

Cook ingredients and place on wholegrain bread and serve

# 5. Pasta with Purple Sprouting Broccoli

450g fresh fettuccine cooked

1 onion finely sliced

2 garlic cloves chopped

2 tsp capers rinsed and drained

1 tbsp parsley chopped

1 tsp rosemary leaves

1 tbsp olive oil

Juice of 1/2 lemon

400g purple sprouting broccoli chopped and cooked

Freshly ground black pepper

Shavings of Parmesan cheese

600ml chicken stock

1 tbsp olive oil

25g bacon finely diced
